2002 Chiarello Vineyards Eileen Cabernet Sauvignon

This is a Cabernet that is perfectly round right now but will only get better with a few years of age. I have always enjoyed the lusciousness of this Cab; it enjoys being paired with many different foods, and loves to go from main course to a dessert featuring cheeses or chocolate. Try it with my Cocoa Spice Forever Roasted Pork. By substituting Cocoa Spice for Fennel Spice, this dish pairs wonderfully with the Cab.
This wine is saturated dark ruby in color. It has a concentrated nose of currant, violets, cedar shavings and black truffles. Its palate has a very site specific black fruit & cigar box quality along with blackcurrant, licorice, minerals and a touch of anise.
